Gajar ka Halwa

 My version


I know many people who hate Gajar ka Halwa, including me. Each time I'm given it in any party, I'll spoon out a little hoping it will be good, and then I am forced to keep it back.  Either its utterly oily or unbearably sweet or empowered with some disgusting essence. Recently, my cousin asked me for gajar ka halwa recipe to make some for my niece. So I decided to try it out and send her some. I know exactly why I hate gajar ka halwa, so I decided to experiment on my improvised version. Confession - this is the first time I ever made this dessert and the result I'll let you know at the end of this recipe.  

Ingredients :









Grated fresh carrots
-

4 cups

Ghee
-

2 teaspoons

Almonds / Cashew/ Raisons
-

1 tablespoonful each

Milk
-

2 cups

Condensed milk
-

1/2 cup

Sugar
-

1/2 cup

Cardamom powder
-

1 teaspoon

Turmeric powder
-

1 pinch






Preparation Method :

In a wok, heat the ghee. Roast the broken cashew nuts, chopped almonds and raisons until the raisins puff up and begin to brown slightly.


Add the grated carrots and sauté them until all its juice evaporates and the carrots begin to dry out.


Add the sugar and allow it to melt in on low flame and when it begins to caramelize pour in the milk.


Add the cardamom powder and turmeric powder and blend in well.


Once the milk begins to simmer, pour in the condensed milk.
Then on low heat allow the milk to completely evaporate occasionally stirring it. You know its ready when the milk has completely evaporated and the ghee begins to clear at the bottom of the pan.


Cool it completely. Garnish with some roasted nuts and raison.

Result :
Coincidentally a few of my cousins and their kids came home the very same day I made this halwa and when I served them with mine, they all said in the same voice, "Oops! no thanks I don't like Gajar ka halwa, I'll eat anything else but this." Since I tried it myself and was confident they'd like it, I convinced them and forced them to try. Well, and they tasted.. and they finished half of what I made and I had to move away the plate and save the other half for my niece who demanded gajar ja halwa. My husband and mom, who aint sweet lovers too kept digging into it.  Everyone who tasted said, "I've never tasted gajar ka halwa as good as this one" Trust me, it was indeed yummy! or else I wouldn't have posted this recipe on my blog.
